Bikini Recipe

Serves 10 servings

To make the Clementine Cordial (makes 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar

Ingredients for the Drink (yields 850ml, serving 10)

400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch

Instructions

To prepare the Cordial: Put the listed items in a saucepan, heat until it reaches a gentle boil, mixing until the sugar dissolves. After that, turn off the heat allowing it to cool down completely. Pour into an sealable bottle, cap it and refrigerate it in the fridge, where it will keep for up to one month.

Preparing the Premix: Mix all the liquids into a large bottle, allow it to infuse for 60 minutes, then filter it best through muslin, so it's fully clarified.

To serve: Measure 85ml of your premix to a cocktail shaker filled with ice, gently stirring carefully for a minute to chill. Strain into an frosted cocktail glass or equivalent, decorate with some cranberries and complete it with a quick spritz of mandarin oil over the drink.
